"Mikakufine BK" is a sodium acetate formulation that contributes to the preservation of the quality of bakery products such as bread and pound cake by suppressing the growth of various microorganisms through a blend of organic acids primarily composed of sodium acetate. By incorporating fumaric acid coated with fats, it prevents the decrease in pH during fermentation and reduces fermentation inhibition. After fermentation, the coating fat dissolves upon heating, providing a stable anti-fungal effect in the final product. Additionally, through a unique formulation technology, it significantly reduces sourness and sour odor.
